Honey Cake anyone?

There're many recipes for honey cake, some of them a little too heavy for my taste. This recipe needs almond, tho I don't enjoy it, so I used grated almond. You can't taste it. I usually dress the top of the cake in laminated almonds (which I Like) after pouring the honey. I find that this cake is a comfort food must-have.

HONEY CAKE

Ingredients :
200 gr margarine (room temperature)
50 gr butter (room temperature)
200 gr of sugar (white or brown)
4 eggs
90 gr of whole grain oat flour
1 teaspoon of baking powder
200 gr of almond finely grated
1dl of honey

Bake the butter and margarine with sugar to a fluffy cream. Add one egg at a time with a tablespoon of flour ( mixed previously with the baking powder) between each egg addition. Add the almond grated and in the end, add the remaining flour.

Put the mix in a greaseproof baking pan at a hot oven set to 180-200 degrees for 45-50 minutes.

Remove from the oven, and immediately from the baking pan. Spread the honey in the hot cake and serve with a cup of rooibos tea.
