A little fresh taste

This Mediterranean style pie it's my favourite pie and it's a fresh strong way to boost your mood.

The Dough first:

In a kitchen, robot put 250 gr of flour 1/2 tsp of salt 175 gr of butter grated rind of 1 lemon 2 tbsp of sugar. Mixed it all until looks like sand or bread crumbs. Add 4 tbsp of water and 2 tbsp of lemon juice. Mix it again until it looks like a dough.
Press the dough into a pie case (22cm) until is fully covered. Line the pastry with greaseproof paper, fill it with dried beans and bake it for about 15-20 minutes or until the pastry is firm or coloured. remove it from the oven and leave the pastry case to cool.

For the Filling:

In a double bottom saucepan mix 40gr of cornstarch with 225 gr of sugar (1). Add the 3,5 dl of water 1 dl of lemon juice and the grated rind of a lemon. Stir with a wooden spoon (or not metal) over low-medium heat until the mixture is the consistency of a thick cream sauce. In a heatproof bowl beat 4 egg yolks with a whisk. Slowly add small portions of the cream into the beaten egg yolks (2,3). Put all back in the saucepan and let it thick over low heat stirring to a thick cream. Remove from the heat. Add 45 gr of butter and gently let it melt into the cream stirring to incorporate it (4). 

For the Meringue:

Slowly beat about 150 gr of sugar into the egg whites. Continue beating until the whites are stiff. 

Assembling:

Pour the lemon curd filling in the case. Pile the egg whites on to the lemon filling, covering it completely, sprinkle with sugar. Place the pie into the oven for about 15 at 190º (on my oven is about 20min.). It all depends on the oven, so keep looking for a brownish look on the meringue.

It takes about 1 hour to make and plus 20 minutes in the oven.
