Lime Pie

Lime Pie

This lime pie is a refreshing treat. This recipe is my choice for summer because I was experimenting with a way of doing this without condensed milk. I love condensed milk and I have a recipe for a great lime pie (more cheesecake) with it but this summer I want to have a lighter version. 

This recipe worked beautifully because it's tasty and very simple to do.


juice and zest of 2 limes

1 egg white

6 tbs of sugar

2.5 dl of cream whipped.

1/2 cup of roasted almond grated

250 gr maria cookies

100 gr melted butter

2 gelatin leaves melted in a tbs of hot water.

The process:

1. Grate the cookies in a food processor and add the melted butter. Press the mixture firmly into the tart mold and put this into the freezer.

2. Whisk a stiff meringue with the egg white and the sugar. 

3. Mix the gelatin leaves melted with the lime juice and zest. Add to the meringue and whisk it.

4.  Add gently the whipped cream into the previous mix.

5. Put this mix into the crust and leave it in the freezer for about 4 hours until the gelatin gets hards.

6. Decorate with the almonds.
